Chef Rev’s Pan Seared Pork Tenderloin Recipe

2 Tbsp expeller pressed Coconut Oil
1 medium Purple potato, large diced
1/4 cup red onion, julienned
1 tsp shallots, minced
6 artichoke hearts
1 Roma tomato, large diced
1 tsp minced garlic
1/2 lemon
3 / 2oz pork tenderloin medallions
1 Tbsp Rosemary Pork loin Rub

In a saute pan, add 1 Tbsp coconut oil and heat medium high.
Add potatoes and cook until they start to get soft, then add garlic, shallots, onions, and artichoke hearts and cook until onions are cooked through.
Add tomatoes and a squeeze of lemon.

In another saute pan, add 1 Tbsp coconut oil and heat medium high.
Rub the pork with the rub and place in the pan and cover. Cook for 3-5 minutes per side, until pork is done all the way through.

Plate the vegetables, arrange the pork tenderloin medallions on top.
