Grilled New York Strip Loin with Chef Rev’s Cowboy Rub

Here’s a delicious dish from Sean Seaton, aka Chef Rev, of Monkey Snacks. His Chef Rev’s Cowboy Rub? Incredible. Look:

Chef Rev's Cowboy Rub


Recipe: Grilled New York Strip Loin with Chef Rev’s Cowboy Rub with a side of Vegetables

1 8 to 10oz New York Strip
1 Tbsp Chef Rev Cowboy Rub
1 large Sweet potato, peeled and cut in 1″ cubes
1/4 cup Red Onions, julienned
8 Brussels sprouts, cleaned and cut in half
2 tsp minced Garlic
1 Tbsp Coconut oil
3 cherry tomatoes, cut in half

In a medium saute pan, heat medium high with coconut oil, add sweet potatoes and cook until a little over halfway done. Add Brussels sprouts and onions, season with sea salt and black pepper.

About the time the onions are becoming translucent, add garlic. Stir and cook everything until potatoes are cooked through and set aside.

While the side is cooking, pat dry your New York strip with a paper towel and season it with the cowboy rub. Place on a hot grill and rotate; flip, rotate a couple minutes each until the meat reaches your favorite temperature. Take it off the grill and let it rest. Remember, while your steak is resting, it is still cooking, so pull it off the grill a little under your desired temp.

Place the potato/brussels sprouts side on the plate and set the steak on top, Yum…
