Cavegirl Cuisine’s Brats and Beer Stew

Did someone say Football Season?! Depending on the size of your game-day party, double or triple this recipe. It is tasty, comforting…and well, it’s just good dude food! And, believe me, no will ever know that you used gluten-free beer! Even serve some brew stew-side while watching the big screen. Oh, and humor me: This one is for my dad…Go DAWGS, Sic ‘Em…woof, woof!!

Cavegirl Cuisine’s Brats and Beer Stew Recipe

3 slices bacon, diced
1 large onion, diced
3 celery stalks, sliced
2 large carrots, peeled and diced
2, 12 ounce gluten-free beers
1 cup beef broth
1 pound uncooked bratwurst in casings
2 cups diced potatoes (gold or sweet)
14.5-ounce can diced tomatoes (fire-roasted, if you can get your hands on some)
1 teaspoon balsamic vinegar
1 teaspoon Sriracha or preferred hot sauce

In a soup pot or Dutch oven, heat bacon over medium until almost crispy, just to render the fat. Add onion, celery, and carrots. Continue to sauté for an additional minute or two. Add beer and broth scraping the browned bits off bottom of pot.

Poke each bratwurst with a fork one or two times. Add to pot. Bring to a boil. Reduce and simmer covered for 10 minutes. Remove bratwurst from pot and slice into 1-inch pieces. Add back to pot.

Add potatoes, diced tomatoes, vinegar, and hot sauce. Bring to a boil. Reduce heat and simmer for 30 minutes until potatoes are tender. Taste broth. Add salt if necessary.
